My Crockpot Breakfast Casserole: A Hit with all Ages!
This is a one-half of my family which gathered for breakfast Christmas morning before we opened gifts, and I am glad to say that my first time to make a crockpot breakfast casserole was a hit with all ages. My eldest son said all we needed were some tortillas to use with the casserole and make breakfast tacos. Even the youngest one year old, kept returning for more.
I have always wondered if the crockpot could be used for an egg casserole and I am pleased to know that it works. I think if I started a cooking blog that I would call it EVERYTHING BUT THE KITCHEN SINK! I like to cook with a lot of ingredients and spices and mix things up in different ways. That is the fun of cooking for me! I seem to always cook with a combination of Southern/Tex-Mex Flair.
My husband and I recently tried these hashed browns and really liked them…so I knew I wanted to include them in some way. This recipe will use two bags of the Alexia Organic Hashed Browns.
The only spice I had to purchase that was not already in my pantry was this organic ground mustard. So here is what I did……
Gigi’s Crockpot Breakfast Casserole
- Spray the crockpot with olive oil…I have it in spray, but you could also rub it with olive oil and a paper towel.
- Pour into the bottom one 16 oz. package of the Alexia Organic Hashed Browns.
- On top, put 1/2 cup of chopped fresh cilantro, 1 cup of chopped green and red bell pepper, 1/2 cup chopped onion.
- On top of those ingredients, pour one small can of chopped Hatch Chiles, mild…if no children are eating this, then you could put on the heat and use a Medium or Hot can of chiles.
- Mix Together in a large measuring cup, one dozen large eggs. Stir together with a fourth cup of milk and one package of your favorite Taco Seasoning. For this one I used Old El Paso Taco Seasoning…again it is mild for children. Stir in two teaspoons of the dry mustard.
- Pour half of that on top of what you have in the crockpot.
- Sprinkle thick cut sharp cheddar cheese on top of the egg mixture. I use a whole bag and it was Kraft brand.
- Then put over that your next bag of hashed browns.
- A cup of chopped onion goes over that with one cup of chopped tomato, and another can of chopped Hatch Chiles, mild.
- Pour over the remainder of the egg mixture and sprinkle another bag of thick cut, sharp cheddar cheese on top.I did not add any meat, but you certainly could put in chopped ham or bacon pieces if you wanted some in the mixture. I set my crockpot for 11 hours and that was perfect. I stirred it up before serving. My son is right…it would make an excellent mixture for breakfast tacos with salsa.
This is so easy for a crowd! I made two Monkey Breads and Applewood Bacon to go with it and the breakfast was eaten up by all! We also ground some Starbucks Christmas Blend Coffee Beans for a strong, holiday coffee and served egg nog along with the meal. I looked at some of the recipes that are casseroles to make the night before and just cook in the oven the next morning and the crockpot idea appealed to me more.

This looks yummy and is proven by your family! Yup, tortillas would have been perfect with it. We love that brand of frozen potatoes. Tell you who else has good frozen hash browns: Trader Joe’s. They are not organic but do not contain undesirable oils.
Yum yum! Love thus. We had a sausage egg and potato casserole too! I’m a celiac sufferer so must watch ingredients in prepared foods so grated my own cheddar and used tiny whole potatoes cooked and cut in halves with an herb mix salt and pepper . Thus makes my prep time longer but it’s worth it! Happy New Year!

Always do a casserole for Xmas breakfast. None of my children eat the same,regular,vegan,lactose-intolerant. so it is easy to customaize the casseroles. Usually use chick sausage or bacon. Make two and put cheese in one but not the other. That way everyone is happy and I don’t have to listen to comments about what”I eat or don’t eat! But have not tried it in a crockpot. Next year………THe childrens smiles says it all. You are blessed! Happy New Year!

Happy to get this, I made 2 breakfast casseroles with a huge bowl of fresh fruit and monkey bread. I served the casseroles with salsa and sour cream. Our favorite was the sausage one with torn up croissants plus the usual. The second one had hash browns and thick cut bacon. Bacon does not work as well and we didn’t care for the mushy part of the potatoes. But next year I will try yours in the crockpot. I like the extra Tex Mex ingredients!
It worked well..no mushy potatoes, but I did not add any meat. I might do ham on the side next year. I made two monkey breads and they ate every bite…always a favorite. Thanks Gayle.
What are Hatch chilies? Are they the same as Old ElPaso chopped green chilies? What size bags of cheese did you use? I definitely want to make this next year but may use chorizo diced up since it is a Mexican sausage.
I believe the chiles would be similar. Hatch chiles come out of New Mexico and we love them in South Texas! Especially when they are roasted to bring out the flavor! I am pretty sure I used two 8 oz bags of cheese.
It would be great for you to include an ingredient list, especially for amounts and shopping purposes.
