Puffy Blanket on over 50 Feeling 40

Big news…we actually had a little cool front go through Sunday in South Texas.  Always makes me want to do comfy, cozy, and, yes…chicken…at my home…my way!

My way is to get a wonderful cozy blanket like this faux fur Puffy Blanket, a steaming cup of coffee and then sit to ponder life on a little porch that opens from my bedroom through French Doors.

The Puffy Blanket was recently sent to me to try and it is really cozy for this time of year and packaged nicely…keep in mind for gifts.  They have a number of specials on their website.

And will be hosting Black Friday specials.  My grandchildren are going to love this blanket when they come for Christmas!

Underneath the blanket, I am cozy at home in my new JJill Leggings and my soft, soft chocolate brown top from Bryn Walker at Dillards.  This is definitely cozy at home my way!

These leggings are great and can do a casual day at home, or a day out and about.  I will be taking them to a new level on Friday’s elegance post.

I love to cook and tweak and experiment and create my own recipes.  My chicken pie is one such recipe that has been loved by many family and friends in the past thirty years.

Adding recipes to the blog has been fun, and I hope helpful to many.  But it was never the focus, and when I was working a day job and the blog, I perhaps did not explain my recipes fully.

My daughter tried to make my chicken pie from an older blog post recently and she scolded me for not writing it out and describing my processes better.  Ouch!

So, I told her I would do my Chicken Pot Pie Recipe again and do a better job.  I am not the type of cook who measures, so I have to really think how to tell an audience the amounts…I promise to be better going forward!!

Gigi’s Chicken Pot Pie!

How to make Chicken Stock on Over 50 Feeling 40

Ingredients for the stock:

1 whole chicken

1/2 cup of chopped yellow onion (I like the sweet yellow onion)

1/2 cup of chopped celery

2-3 minced garlic cloves (I like a generous amount of garlic, it is up to you)

I cut two large sprigs of Rosemary off my plant and toss it in…taking the stems out when it is cooked.

Cover in water in a slow cooker.  Add two teaspoons of salt, and cover top of Chicken with Mrs. Dash Garlic & Herb seasoning.

Cook the stock for at least 8 hours.  As I say with almost everything, rich, well seasoned, savory stock is the key!!

 

Chicken Pie Filling On Over 50 Feeling 40

Ingredients for Pie Filling:

6 Tablespoons of butter

1/2 cup of All Purpose Flour

3 cups of the chicken broth you made overnight

3/4 of Chopped Carrots

3/4 Cup of your favorite peas

1/2 cup of chopped celery

1/2 cup of onion (Yes, I love onion!)

1 more minced garlic clove

NOTE:  I have also created pies with mushroom pieces and with a little chopped red pepper…whatever your pleasure!

Shredded chicken which cooked overnight.

Take the chicken out of the slow cooker and set it aside to cool.  Make sure you use a serrated spoon in order to get all of the pieces and any bones.

Once it is cooled, then shred the chicken into a medium bowl. 

Take a cup of the chicken broth and cook all of the veggies in a separate pan until the carrots and celery are soft.  Then drain and set aside.

In a large pot, melt the butter, whisk in the flour until it makes a thick ball, slowly add the three cups of broth and whisk until the sauce is thick and bubbly.

I taste at this point to see if additional salt and pepper might be necessary.  Mr. B likes additional pepper. You could even add a hint of cayenne to this.

Then stir in the veggies and the chicken.

In the name of time, I usually use a Pillsbury ready made pie crust. Rarely do I make a pie crust.

Children love to put a cookie cutter design in the middle and you can make these pies seasonal with different designs.  They are also great gifts.

Cover the edges with foil and cook at 400 for 30 minutes or until golden brown.

It does make enough filling for two pies and the extra filling will freeze nicely.  Easy and delicious. Add a salad and you are set for dinner.

These are older images and not from the new kitchen…but cooking a pie sounds pretty good this time of year!

  1. What a wonderful way to begin a new day! I try to have a few of those during the week, though with temps in the 30’s now, I am under the fluffy blanket indoors! I love starting a day a little more slowly and taking time to think or just sit quietly and let my mind wander. I do love recipes that makee e extra, good to freeze for those ectra-busy days, and good to have things ready to go in the freezer in case someone stops over. I’m puppy sitting today, but had time to enjoy my coffee while teaching the little guy that he needs to entertain himself sometimes. It worked! I have my slow cooker going at home with extra for the freezer! More puppy sitting days ahead!

  2. Good morning. Thank you for the children pot pie recipe. I really like that it makes two.
    Also I want to thank you for the “giving plate” idea. I ordered some and have baked my goodies, and on Thanksgiving Day I will give them to family and my next door neighbors.

  4. Your suggestion of a cozy blanket is perfectly timed Pamela, as just looked out my window and snowflakes are softly falling. As to your chicken pie recipe which sounds delish I do make something similar to it however mine is more of a pot-pie (crust only on top) and I add cubed potatoes to mine plus its method of prep differs a little. Must admit though, haven’t made any for awhile as made them in individual servings using 1 or 2 lb. foil disposable containers (about 2″ deep) with lids and often gave them to my Mother whom in turn would give to friends in her senior’s church group who would only have to reheat them as normally precooked them. All said; they were always gratefully accepted as were a meal in themselves with all the veggies and chicken.

    Tip: To avoid lumps when adding hot broth to flour; in a small dish or measuring cup take about 2 tbsps. of flour and add it to about 1/4 cup of warm broth first. Mix well then return to flour ‘n butter mixture and whisk in remaining broth.

  6. My grandmother’s version of pot pie had biscuits all over the top instead of crust. It was terrific. Since my husband’s heart attack, I’ve been a vegetarian for eight years, and eat mostly plant based. I eat very differently than when I was younger. And my husband these last few years has become the cook (fine with me, though I once loved to cook and still do from time to time). I too have my comfort foods, though, and appreciate the “mood” of cozy you have created.
