Happy Thursday, ladies! Today I have a perfect fall post with warm popovers and cozy coats.
I realized months ago when I changed my coloring from a cool winter to a vibrant autumn, that all of my heavy coats were black.
The need for a nice warm coat where I live is always risky, but after the great Texas freeze of last February, I would not want to be caught without one.
I wore one of the heavy black coats for days…with a lot layered underneath since we had no power….except a fire in the fireplace.
Also, I like to have a nicer coat than a puffy jacket in case a special winter occasion hits the calendar.
But, I understand that the predictions this year are such that I might not have an opportunity to wear this coat at all….we shall see…last year’s big freeze was obviously a surprise to all of us.
Nevertheless, I am glad it is now in my wardrobe.
There are many beautiful coats of different colors, but this Ralph Lauren Buckle Collar Coat created just for Macy’s hit the mark to me at a doable sale price.
The color (one of five) is called New Vicuna…really camel…and I believed I could do more with it to get mileage out of the purchase.
This is not a real heavy coat, but will work for South Texas. If I lived in the north, I would probably go with a heavier selection.

Now, thinking of colder weather is a great time to think about pumpkin popovers.
I wish I had been a member of Leigh Ann’s family last week when she made these…they look so good and she said they went away quickly!
WARM PUMPKIN SPICE POPOVERS
PUMPKIN SPICE POPOVER INGREDIENTS:
3 Tbsp. of unsalted butter, melted…plus use extra for greasing the popover baking cups
3 large eggs, best at room temperature
1 cup of milk
1 cup all-purpose flour
1 1/4 tsp. pumpkin pie spice
1/2 tsp salt
(Use a little confectioner’s sugar for dusting the tops)
- Heat the oven to 375 degrees. Generously grease six 6-oz. custard cups, or use a popover pan with buttered cups, or even a muffin pan with buttered cups.
- In a blender or mixer, combine, melted butter, eggs, milk, flour, spice, and salt until smooth. Pour around 1/3 cup of the batter into each baking cup.
- Bake for 50 minutes, then quickly cut a small slit in the top of each popover to release the steam; bake 10 minutes longer, Immediately remove the popovers from the cups, loosening with a spatula if necessary. Serve hot…dusted with sugar.
They are said to be very yummy and will keep frozen up until one month.
I am going to try these….maybe this weekend!!
