Happy Tuesday…four days and counting.  Before it was too late, I wanted to share my original recipes featuring holiday jam!

This has been my busiest holiday season in a long while and I believe one of the reasons is spending time in the kitchen to create my own original recipes!

I enjoy doing this…it is fun!

MY ORIGINAL RECIPE FOR THUMBPRINT COOKIES

During my Texas Hill Country adventures with Leigh Ann, I was introduced to Stonewall Kitchen Jams.

When I tasted their holiday jam, I immediately thought…I can work with this…and make creations perfect for either family or to gift for friends.

Naturally, a thumbprint cookie was a good place to start!  I took an old Betty Crocker recipe and tweaked the ingredients a bit and the process, and that is what makes it my own original. 

PAMELA’S ORIGINAL THUMBPRINT COOKIES

 You will need:

½ cup of butter, soft

½ cup of butter flavored shortening

½ cup of packed brown sugar

1 teaspoon vanilla

2 eggs, separated (I originally won the little yellow egg separator at a Tupperware party…it is perhaps over 30 years old!)

2 cups of all- purpose flour

½ teaspoon salt

1 teaspoon of cinnamon (I added this to the dough to complement the seasonal spices in the jam)

2 cups finely chopped, roasted walnuts. (tastes so much better if the nuts are roasted.  Just place in the over at 400 degrees for about 15 minutes or watch so they are toasty but not black!)

  1. Mix the brown sugar, shortening, butter, vanilla, and egg yolks in medium bowl well.
  2. Stir in the flour, cinnamon, and salt until the dough holds together.
  3. This is the important part: Freeze this dough or place in the refrigerator at least for 24 hours.

4. After the dough has chilled and you are ready to cook, beat the egg whites slightly. They wait for you just fine in the refrigerator while the dough is chilling.  Then shape the dough into 1-inch balls, roll in the egg white, then in the nuts, and place on a parchment paper on your cookie sheet.  Of course, don’t forget, to press your thumb deeply in the center of each one.

5. Bake for 10-12 minutes (depending on how soft you like your cookies) at 350. Immediately take the cookies from the baking sheet to a wire rack.  Cool completely about 30 minutes and then fill the cavity with your HOLIDAY JAM…or favorite jam.  Filling the thumbprints will be easier if you zap the jam in the microwave and warm it before use.

These were gifted to a neighbor, and Mr. B ate his fill!  I also made some rolled in roasted coconut, but the ones in walnuts were the best.

I have been making this recipe with strawberry jam for years, and decided to tweak it with the holiday jam.

I bet it is also good with the Stonewall Kitchen Strawberry Champagne Jam.

I am going to try it soon!!

PAMELA’S ORIGINAL RECIPE FOR JAM BREAD

My original recipe featuring holiday bread

 

You will need:

1 cup of softened butter

1 ½ cups sugar

1 teaspoon vanilla

¼ teaspoon lemon extract

4 eggs

3 cups sifted flour

1 teaspoon salt

1 teaspoon cream of tartar

½ teaspoon baking soda

1 whole 12.5 oz jar of Stonewall Holiday Jam

½ cup dairy sour cream

1 cup broken roasted walnut pieces

  1. In a mixing bowl, cream together the butter, sugar, vanilla and lemon extract until fluffy.
  2. Add the eggs, one at a time, beating well after each addition.
  3. Whisk or sift together the flour, salt, cream of tartar, and soda in a small bowl.
  4. In another small bowl, combine the jam and sour cream and mix well.
  5. Add the jam mixture alternately with the flour mixture, mixing well after each addition.
  6. Stir in the nuts.
  7. Divide into three large loaves, or five small ones and cook at 350 for 55 minutes

This bread is popular with the adults I cook it for…HOWEVER, my three grandsons (ages 8,6, and 3) said it was not good with the nuts…and to leave them out and try again! 

I have gifted this bread before with flavored cream cheese spread…so good with the cream cheese!  This is good for Christmas brunch!

This is not my creation, but my daughter-in-law’s “Christmas tree” charcuterie board, she made for a party this past weekend.  Another great way to feature the holiday jam and cream cheese spreads.

I have been cooking so much this year, and will be on Christmas Day, I decided to accessorize my Christmas aprons (there are two) with brooches! 

Love to add this touch to my aprons…so much fun!

  1. I like the idea of accessorizing your aprons. Great idea! Your thumbprint cookies remind me of some I make each year using my grandmother’s Croatian recipe. The ingredients are a little different, and we always have called them birdsnests. Same general concept, and I have always used red currant jelly like she did. Not the easiest to find, but it makes them very unique. Your bread looks yummy! I’m spending my week in the kitchen too…lots of fun! These things do make great gifts and people who don’t do a lot of baking really seem to appreciate the homemade goodies!

  2. Like you I’ve tweaked the Thumbprint Cookie in similar ways abd have got to try that jam if I can find it today! Like you too- I toast the walnuts for that extra something they add!

  3. Seeing the brooches, I’m reminded how often my mother wore them with her earrings, but rarely wore a necklace. Your recipes look good. I often cook breads or cookies and give to our neighbors who have children since my husband and I do not need to be eating many sweets. Isn’t it funny how small children do not like nuts in baked goods, but lose that dislike as adults. I make my own strawberry, blueberry, and peach jams and give most away to service people (mailman, plumber, etc.) throughout the year. And when I’m in the kitchen, I feel undressed without my apron though it’s not embellished as yours. Have a good day.

  4. I love Stonewall Kitchen jams. Your treats look yummy! I like to cook, but not to bake. But somehow, thanks to the wonderful baking elves out there, we always magically end up with homemade cookies, and my favorite buckeyes. Buckeyes are a tradition around here … fudge-y peanut butter balls partially dipped in dark chocolate to look like a buckeye. I don’t know if this is regional, since Ohio is the buckeye state, or if everyone has had this wonderfully rich holiday dessert.

  5. Enjoyed the carousel of brooches, and may need to order the Dillard’s Santa and his reindeer crossing in front of the crescent moon – so cute!! We order from Stonewall, usually their chutneys and jams. That Holiday Jam is a favorite. I will try making your bread creation for our Christmas brunch. Heading north today to spend the week with my boys. They’re expecting being snowed in over the weekend and into next week, so now is the time to go and race back! I am NOT a confident snow driver.
