Happy June Friday, all!  Today I want to share with you a taste of summer with a JJill Dress, salmon and peaches!

We are experiencing excessive heat early this year and it has stayed solidly in triple digits.

That is why I am looking at wearing dresses more often, and finding the silver linings of summer for you.  

What better silver linings that easy dresses, salmon and peaches!

Regular readers know that I keep a close watch on warm colors that fit my wardrobe family.

This JJill Ultrasoft – Gauze Button Hem Shirtdress in baked clay is easy and comfy with pockets and button details on the sides at the hem.

It is 100% cotton gauze and also is available in Navy Blue….I received compliments from retail workers on the first day I wore this out.

There are many ways I will be able to accessorize it so that it looks different throughout the summer. I am so glad I added it to the family!

I mentioned to you in the wine tasting post that I discovered a new way to cook salmon and make a delicious caprese salad.

Both are SUPER EASY!!

All you do is rub your salmon down with a rustic olive oil, and sprinkle generously with this Adams Reserve Sweet and Spicy Seafood/Salmon Rub.

Then bake at 400 degrees for 20 minutes….or put on the grill.  Mr. B said it is a new favorite…better than eating out!

The Caprese salad was awesome, but I confess I did modify the recipe some.

This Balsamic vinegar is incredible and I am so glad to have discovered it. Definitely worth the money. 

Here is a similar one at Williams Sonoma….Williams Sonoma Balsamic Vinegar of Modena.

The recipe calls for

8 oz. Mozzarella Pearls, quartered

1 pint of angel sweet (cherry) tomatoes, halved long ways (I just kept them whole)

2 Tbsp. Balsamic Vinegar

1 Tbsp. Adams Reserve Cacio E. Pepe Seasoning

2 Tbsp. rustic unfiltered Olive oil

Modifications:

I could not locate the Cacio E. Pepe Seasoning.  I read online that it consists mainly of Romano Cheese and pepper…so that is what I used!

I also added some fresh basil from Leigh Ann’s herb garden.

I made it a day early to marinate in the refrigerator and it was so good…tastes great with the salmon…and wine, of course!

Today, I share with you my roadside farm and eat a peach contribution…. done together!

Everyone in Texas knows that the very best peaches come from The Fredericksburg area!  They are delicious!

Mr. B and I stopped by this roadside stand recently …hoping to find both peaches and tomatoes.

They did not have the tomatoes, but Leigh Ann brought me fabulous ones from her garden.

The peaches did not disappoint!  So good…some time I plan to go pick them… which is offered at several orchards in the area.

For a healthy, summer dessert, I like to cut one up and eat with Mixmi Frozen Yogurt…probiotic and low calorie.

They are so good and I like to get out and support the local farmers and producers in our area.

Leigh Ann and I are chipping away at the Summer to Flourish list and I know at least two readers are joining along with us.

It is fun and does help us to bear the heat…for now any way!

  1. You look great in that dress Pam! Your creative jewelry is perfect with this, especially in your climate. A scarf, even a lightweight one, in triple digits would be oppressive, but your necklace really makes this dress a standout. I saw it in the store and thought it needed something, and you added that something that really does work! Caprese salad is a favorite for me too. I’ve been making pesto already with my basil, can’t believe I’m already harvesting in Ohio weather, but there it is. It’s really simple to toss it on the little mozzarella balls and cherry tomatoes, add extra basil and voila! Real, aged balsamic makes a huge difference and is definitely worth the price. Not sure if we have any good peaches available yet, but I’m going to check…one of our local garden centers has a truck that comes up from Georgia a couple times in the summer and the peaches are a huge treat. Definitely going to check that out, or put it on the list to do! Your healthy way of eating them looks delicious…I admit I was thinking peach pie! 😉

  2. Oh my, Karen….I love peach pie…it is a favorite, but I am trying to avoid it these days…not to mention peach cobbler!!
    This necklace is very lightweight so it works well for summer…I like this dress and it is so easy to throw it on and head out for whatever my calendar brings.
    I am considering ordering the navy dress too for when I need the darker color.

  3. You’ve hit some nice high notes today, Pam! Your JJill dress is so attractive, and hopefully, cool. Your salmon recipe would probably be a bit spicy for me, but I do love caprese salad although I’ve never made it myself. We are fortunate to live about a mile from our local farmers market so we can usually get fresh tomatoes and peaches during the season. Just last night I was looking at a peach butter recipe although I have only made peach jam. However, I’ll be waiting until freestone are in season. Your little Beck must bring lots of love and laughter into your lives ! Grandchildren are so very precious!

  5. Pan, good morning! Love my salmon too, Pam , and grill it (yes even year round) here in the northeast. I’ll have to try your method! We eat a lot of fish here, as we live on the coast. Best of all are salmon (wild caught) and our North Atlantic haddock which is simply delicious. We also love our local mussels done with lots of garlic and white wine! Yum!
    Dresses are just the coolest when its as steamy hot as you’re experiencing, and you do look beautiful in your newest!
    If it snows I immediately make sure there’s a path to our grill!

  7. Great look for you, Pam. You styled it so well. What a great necklace. Accessories make the difference! I saw that dress but went with a straighter linen style in a viridian green. Love them both as a fellow autumn. Thanks for the great recipe variations. Summer is here in northern New England! Well, almost.

  8. Have you tried grilled peaches? Cut in half, top with a little balsamic and grill. Delicious and easy. I like them with salmon!

  13. Your little Beck is adorable!! Thanks for the dinner idea. We have recently been taking an Alaska fish subscription even though we also have wonderful local salmon, so I am fixing fish a couple times a week. Hadn’t thought to pair it with a Caprese salad, but that would be a perfect complement to the buttery fish.
    I am off on a day trip with my dear friend today, headed north to shop for an ottoman for her, and some new sunglasses for me (summer checklist 😉). We won’t have local peaches or tomatoes until late July or perhaps August since we are stuck in perpetual spring so far! The good of that is our farmer’s market continues to have the cool season lettuces in their glory.

  14. That dress looks terrific on you, and I think will get a lot of wear in the heat. We just returned from a jaunt to the pick-your-own strawberries farm in beautifully sunny, 75-degree weather, and I’m making freezer jam this afternoon. Shortcake dinner tonight (June tradition here … I’m in the biscuit camp). On the way home, we found a tiny honor stand (just a table by the road) with multi-hued eggs literally minutes from the nest. These small things are such happy things, aren’t they?

  16. Happy Birthday to Beck! His smile is infectious! Your dress looks cool & comfortable. I love salmon, & it is so healthy for us. I’m not familiar with the seasoning you used but will look into it. I’m looking forward to fresh peaches not just to eat, but I have a super simple recipe for peach cobbler. So good with a dallop of whipped cream!

  17. Sounds Great Becky! The seasoning is more of a sweet smoky taste than spicy…in fact, it does not taste very spicy at all…but is really good on the salmon!

  18. Love grilled peaches … Fattening option — fill the centers with yogurt, walnuts, and drizzle with honey if you like. (I skip the honey) You could also use creme fraiche.
