Happy Sunday morning, friends!  Welcome to Sunday mornings at home!

This is my chance to catch you up on happenings in my world and share any thoughts from the past week.

Since this is a lifestyle blog for women over 50 (yes, with a fashion focus), I want to make certain that I assist you with all areas of your lives.

On this Sunday morning at home, I am sitting at my desk and watching the morning sunrise turn the clouds pink through a beautiful blue.

This time of year always brings amazing sunrises and sunsets.

I want to begin today with a delicious veggie meal I made this week….so let’s get started with Sunday mornings at home.

SUNDAY MORNINGS AT HOME – FAVORITE MEAL OF THE WEEK

Since I added recipes to my weekly newsletter on Wednesdays, I have seen many recipes I wanted to try myself.

I cannot tell you how good this meal is and loved by Mr. B as well…but I did make teaks and will explain my process.

This was a combination of two recipes I found online: Enchilada Sauce and Stacked Vegetable Enchiladas.

While I love vegetable meals, I am not a vegetarian. 

I know I have said this often, but  my chicken broth is so good that I often have it in the freezer and ready for meals such as this.

As a reminder, when I make the broth and chicken soup I do this:

Place a chicken in a crockpot covered in water

Add 1/2 teaspoon of salt; chopped onion; two stalks of celery; 2-4 garlic cloves; two stalks of fresh rosemary from my backyard, and a teaspoon of Mrs. Dash garlic & herb seasoning.

I slow cook this overnight.

You are looking at little jars from my freezer that equaled the two cups of broth in the recipe.

I believe It added much flavor to this dish.

The next thing I did after thawing my broth, was roast the vegetables for the enchilada casserole.

One of the reasons I was drawn to the recipe was it’s use of roasted vegetables…which I make often for me and Mr. B.

Here is how I tweaked that part of the recipe:

I added more onion and seven garlic cloves to the roasting pan.

After the olive oil, I seasoned the veggies with this Fiesta Fajita Seasoning…which I use on many things in addition to fajitas.

While the veggies roasted, I took out all of my seasonings for the sauce.

The only purchasez I made at the store to do this dish was tomato paste, corn tortillas, and Weight Watchers Shredded Mexican Blend Cheese (another tweak).

Perhaps it is because I am born and raised Texan that I always have on hand chili powder, cumin, cayenne, etc.

Once the vegetable roasting was done, I minced two of those roasted garlic cloves into the sauce for a richer taste.

This sauce is so good, I am going to make a large batch soon and freeze it to keep on hand.

There are many dishes I would use it for.

This WW cheese blend was delicious and I did not miss full fat cheese at all in this dish.

I confess that I purchased the jalapeno and cilantro already chopped.  I keep meaning to grow my own cilantro…this has motivated me to get that done.

Last week in Sunday mornings at home I mentioned the tree I grew from an acorn.

I as asked about the tree…which I call the Larchmont Tree and asked to share a picture…so here it is in all of its glory.

We lived and raised our three young ones on a street called Larchmont.  The home was my husband’s grandparents home and gifted to us as a wedding gift.

His grandmother was in the area Garden Club and planted the trees in the neighborhood as well as a red oak in our front yard that I particularly loved in the fall.

It was a special time for our family.  When I knew we had out grown the home and we began looking, I took acorns from the Larchmont house and planted them in a small pot.

As the acorns began to grow a tree, I would repot it to larger sizes.

When we moved into our new home, Mr. B and our sons planted the tree…I prayed over the tree almost daily because it represented our family story to me and I wanted it to grow.

And it has…however, has not yet produced its own acorns.  I know there is a chance it never well…but I still love the tree.

I also love the fact that one of my sons wants acorns from this tree to grow his own and keep the story going.

  2. Good morning, Nyla! Thank you for your encouragement! My shoes are several seasons old, so I tried to find some current ones for you. I particularly love them in the fall!

  3. Your roasted vegetable dish certainly looks delicious! I downloaded both recipes to try. I keep looking for cool animal print shoes that I can wear with my various foot and leg problems but warmer leopard print seem to be most prevalent. I’d guess warm leopard on my feet is acceptable since it’s far away from my face and gray hair. The story about your Larchmont Oak is very special whether it bears fruit/acorns or not. We’ve moved numerous times during our 53 year marriage, and for many of those years I had a Schefflera I received when our first son was born that I carried with us. However, I apparently did not take good enough care of it as it slowly died, and I felt a definite loss.

  4. I understand, Celia. I would feel such a loss if the tree were to die and if we ever move, it will be difficult to say goodbye.
    Since I wear black away from my face and it works for me, I would say the shoes would definitely work for you…but there are many shades in the slideshow on the market.

  5. I just ordered a Nest candle in cassis, thinking the heavy fruit scent of black currants would strike a nice fall note. You can roast vegetables and peelings, and make your own vegetable stock from them if you want. It’s different, but it’s good. I always have a heavy hand with garlic, and I too use fajita seasoning, cumin, cayenne, smoked paprika, chipotle powder. It just makes everything more flavorful. Fall would be a good time to plant cilantro. It’s a bit fussy … needs cool weather to grow and not bolt immediately to seed.

  8. Thanks for another great dinner idea. I also roast veggies often, especially fall and winter. I make enough extra to eat cold on a salad or two. I hope you take some family photos around the tree over the years, so if you do move you’ll have the pictures as another memory. Happy Sunday to all from here at the beautiful Oregon coast!

  10. Pam, if the original tree is still living, maybe you could get acorns from the Larchmont oak with permission from the present owners to plant and nurture. You are honoring a remarkable old southern tradition…pass-a-long plants. Years ago, many southern ladies grew a variety of plants that were passed along to family, friends and neighbors. Gardeners are blessed with a green thumb and a generous spirit and we are the fortunate ones to benefit.
    Thank you for your beautiful story; one of many that touch hearts.
